Stuffed flatbread

Enjoy one of my favourite quick fixes for lunch or dinner as well. It’s healthy, filling and full of fibre too.



Ingredients for 1 Serving: 1 wholemeal pita 150 g chicken breast fillet

1 tbsp oil of your choosing ( I always use coconut oil for cooking)

red paprika powder to taste (hot or sweet, I normally add a bit of both) 1/4 cucumber 1 vine tomato 1 handful of butter lettuce

1 handful of white cabbage 1/2 cup yogurt (low fat)

1/2 red onion 1/2 garlic clove some parsley salt & pepper



How to do it:

1. Cut the chicken breast into small strips. Wash the lettuce and shake it dry. If necessary, break into bite-sized pieces. Wash cabbage and cut into small pieces. Wash and slice tomato and cucumber. Trim the onion and cut into rings. Finely chop the garlic clove and parsley. 2. Heat the oil in a pan and sauté the chicken strips. Season with salt, pepper, and paprika powder. 3. Mix yogurt with garlic, salt, pepper, and parsley. 4. Cut the flat bread open and smear one side with the yogurt dressing. Distribute the meat evenly on that side and then add the other ingredients and spread the rest of the dressing over it. Enjoy immediately.


Tip: Instead of meat, this can be made with falafel!
